Peanut Butter Chocolate Chip Muffins



Who can complain about peanut butter and chocolate for breakfast?  Serious yumminess.  These peanut butter chocolate chip muffins are the perfect breakfast.  They are a not too sweet peanut buttery nugget of goodness.  I have made these in the past and froze them for mornings when I need a little something extra special.    
A few things to remember when you're making these: #1: don't overheat the butter in the microwave like I did because it will sound like a bomb went off and definitely wake your sleeping baby and #2: have a piece of peanut butter toast while you make these because your mouth will be watering and, if you don't, you will eat the rest of the chocolate chips that are left in your bag (not that I have any experience with this).

Ingredients:
2 1/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
2/3 cup brown sugar
6 tbsp. butter; melted and cooled
1/2 cup peanut butter
2 eggs
1 cup milk
1/2 cup chocolate chips
1/2 cup peanut butter chips (optional, you can substitute chocolate chips)
Cooking instructions
1. Preheat oven to 375 degrees and line muffin tin with 12 paper liners.
2. Mix dry ingredients together in a bowl.
3. Mix brown sugar, melted butter, peanut butter, eggs, and milk in a bowl.
4. Add dry ingredients to wet ingredients slowly, do not over mix.
5. Stir in chocolate chips and drop mixture into muffin liners.
6. Bake 17-21 minutes until toothpick comes out clean. Allow to cool for 5 minutes before removing.
