White Chocolate Oatmeal Cookies



I had the pleasure of substituting in my good friend, Beth's, first grade classroom.  She was my mentor and friend for the five years I taught and I was happy to be in her classroom for a half day.  I wanted to bring some of my teacher friends a little treat since I don't get to see them too much. After some careful consideration, I decided on white chocolate oatmeal cookies.  

I always forget how yummy white chocolate is in a cookie.  It is just soooo surprisingly good and it catches me off guard every time.  This cookie is a no frills cookie packed with oatmeal goodness.  It was a welcome taste after all the peanut butter goodies I've been baking lately.  Let me know if you try these!  Enjoy!

White Chocolate Oatmeal Cookies

Ingredients
1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups oats (rolled or quick)
2 cups white chocolate chips

Directions
1.  Preheat oven to 350.  Lightly grease cookie sheets.
2.  Mix butter and sugars until creamy.  Mix in eggs and vanilla until combined.
3.  Sift dry ingredients.  If you have a baby that needs your attention like me or just don't wanna, skip the sifting.  Slowly add dry ingredients to wet ingredients.
4.  Add in the oats and white chocolate chips.  Drop onto cookie sheets.
5.  Bake 10-12 minutes, I suggest 10.

  1. I know this isn't a new post, but I saw the little photo at the bottom of your tot school post and had to see it! Yummmmm! Oh man - we've gone paleo and I try to keep the sugar out (like all the time. It's hard), but these just look so deliciously cheat worthy! I'm pinning and will most definitely be making these for a special occasion! Saturday counts, right? I mean, it's the weekend so that's special...
