Triple Chip Blondies
It is a cold, rainy, possibly snowy day here on the Trail. Isn't May Day supposed to be all about flowers and popcorn and sunshine? Not this year. These triple chip blondies are just the pick-me-up I needed for a day like today. I am planning on taking these to our Bible study tonight, I think they will be perfect for this chilly May Day.
These blondies are not too too peanut buttery. They have peanut butter chips in them and that's about it. I decided I needed a teensy break from jam packed peanut butter sweets. I found this recipe over at our best bites and they are pretty simple and gooey. It took me about 10 minutes to get them ready to pop in the oven...love that! Here is the recipe, let me know if you try them and how they turn out!
Triple Chip Blondies
Ingredients
1 cup salted butter
2 cups light brown sugar
2 teaspoons vanilla
2 eggs
2 cups flour
2/3 cup chocolate chips
2/3 cup white chocolate chips, 1/3 cup more for the drizzle
2/3 cup peanut butter chips
1 teaspoon shortening
Directions
1. Preheat oven to 350. Grease a 9x13 pan.
2. Melt the butter. Combine butter and brown sugar in a large bowl. Add the vanilla and eggs and beat on medium speed with mixer until combined.
3. Add the flour and mix only until just combined. Add the chips.
4. Slather the batter into the 9x13 pan and bake for 20-25 minutes.
5. After completely cool, place the remaining chips (can use white chocolate or regular chocolate chips) and shortening into small freezer bag, seal it, and heat it in the microwave in 15 second increments. Cut a small corner of the bag and squeeze the melted chocolate onto the bars.
